Books and Sweet Potatos

Today while waiting for my fiance to get home I stopped by the local bookstore. After browsing through the various science fiction books I made my way (as usual) to the cookbook aisle. Stuck back behind some large Texas Cooking books I found it; Chocolate and Zucchini. I have been a subscriber to the blog for months now, so needless to say I was quite excited that it found itself to my tiny town. I picked it up, along with a few Terry Pratchett books and made my way back home.
In between reading the book I started slicing up some sweet potatoes for home fries. Then I made up a quick aioli sauce to dip them in (not completly from scratch today, was feeling lazy).

  1. Sweet Potato Fries with aioli sauce

1 very large sweet potato
2 tbsp rosemary chopped fine
3 tsp salt
1 tsp fresh cracked pepper
3 tbsp olive oil
1 clove garlic
1 lemon
1/4 cup mayonnaise

  1. Preheat oven to 350 degrees
  2. Cut the sweet potatos into strips about 1 inch thick
  3. In a medium bowl mix the potatos and olive oil until coated
  4. Lay out on a cookie sheet, making sure not to overcrowd the potatoes
  5. Cook in over about 30 minutes or until golden. You may need to flip the potatoes to insure they they dont burn
  6. Meanwhile, combine the rosemary, salt and pepper in a small bowl.
  7. Chop the garlic coarsely and place in bowl with mayonnaise.
  8. Squeeze lemon juice into mayo mixture and stir til combined.
  9. Once the fries are done sprinkle them with the salt mixture and serve with aioli.

Tonight while my fiance plays Rainbow 6 with his friend I think i will curl up with Chocolate & Zucchini and drink some pomegranate wine. Wonder what food it will pair well with...
